Finland's food culture is built around fresh, natural ingredients gathered straight from the waters, fields & forests.
For all those who know me are sure to call me a glut or gastronome.Yes, I don't look like a person who eats, but they say never judge a book by its cover.
So here is what I devoured at Gustav Bar & Restaurant in Rovaniemi.

- Aura Bubble Pops:
An unforgettable dining experience. You can have dinner in nature and at the same time be protected from wind, rain and snow and have an exceptionally cozy atmosphere.
- Rainbow Trout & Peas:
In this dish, the flash fried rainbow trout is served with mushy peas, marinated peas, and roasted garlic.Dressing the dish with a unique twist is the Japanese ponzu sauce.This dish TOPs any trout dishes I have tried from around the globe. I rate it 10/10 and also my TOP favorite.
- Buckwheat Waffle:
Made with so much love. This waffle is fried, crispy & thick using the same sourdough which was whipped by the restaurant owner's grandfather. Top the waffle with whitefish roe, onion, and smetana(sour cream). Tall & Slender leek has been included in the dish in the form of velvety-smooth mayonnaise and green oil. Yum Yum Yum!
- An Ode to Onion:
Potato Croquettes with caramelized onion puree, pickled onions, and a rich onion broth. This dish has the “vegetarians" craving for more.
- Mushroom Risotto:
If there was ever a dish that was uncomplicated, it's a Risotto, although it still has to be prepared with precision. Made with mushrooms and crisp kale. Very intrinsic and rich flavors can be found at Gustav in Rovaniemi.
- Venison & Bilberry:
Seared Sirloin of Venison in rosemary sauce flavored with bilberries and accompanied by beer pickled and caramelized parsnip.
- Almond Cake & Whisky:
a soft almond cake is moistened with whisky syrup and is perfectly accompanied by ice cream prepared with whisky, coffee caramel and namelaka made from roasted white chocolate. I swear I could have had a dozen and been comfortably inebriated.
- Karl May Red Wine blended especially for Gustav:
HARMONIOUS – ELEGANT – SAVORY-FRUITY
Pinot Noir is one of the essential German red wine grapes. This wine of the May brothers is slender and elegant with warm hints of cherries. A chic wine for extravagant every day drinking. Sometimes there is no reason to celebrate. But maybe that is the perfect reason to drink a nice bottle of wine.
- Karl May Red Wine blended especially for Gustav:
